据外媒报道，受名厨带动以及墨西哥市场的放开影响，加拿大鸭肉需求强劲，生产商扩大产量应对强劲需求。
据报道，加拿大产北京鸭的老牌生产商Brome Lake，投资3千万元，把魁北克省Asbestos地区的一座之前生产牛肉的工厂，改建为鸭生产厂。这将使在未来5年鸭年产量翻番至400万只。
为了保持竞争力，安省的鸭生产商King Cole Ducks也计划增加产量。预计Fraser Valley Specialty Poultry等三大加国鸭生产商，目前的550万只鸭的年总产量将被翻番。
鸭作为亚裔社区的美食，产品在不断地更新。尽管鸭肉的价格比鸡肉还贵，但它正在逐步取代价格暴涨的牛肉。
